These Peanut Butter and Jelly Cups are so dang easy to make and kids LOVE them! They are full of protein and just taste so delicious! I even love eating them.
As a child, I always enjoyed having a pb & j sandwich! My mom would make them all the time and I loved eating them. However, this new twist on the old-fashioned peanut butter and jelly sandwich is a win! A fun approach to an old-fashioned favorite!
These are perfect for your picky eater. My youngest is SO picky but if I make mealtime and his food a bit more interesting and different, then he will eat it. Go figure!

Peanut Butter and Jelly Cups
Equipment
- Muffin tin & liners
- mixing bowl
Ingredients
- 1 lb creamy peanut butter
- 1 1/2 tbsp honey or maple syrup
- 1/2 cup coconut oil, melted
- 1/4 cup jam or jelly, any flavor up to 1/2 cup
Instructions
- Place liners in muffin tin
- Mix peanut butter, honey or syrup, and coconut oil till smooth
- Scoop equal amounts into each liner
- Spoon in jelly and swirl to distribute
- Freeze cups for 15-20 minutes or until fully set
- Thaw and enjoy!
